Hello, LiveFitters! It is squash season and I love spaghetti squash, acorn, butternut…you name it. You know what I don’t love? Cutting the damn thing in half. Doesn’t matter how sharp my knives are, I feel like I’m going to cut off my finger every time!
Squashes aren’t easy to cut. They are unstable and have tough skin. Recipe for disaster.
I’ve discovered a BETTER way to prepare squash, and another great reason to use your crockpot.
Toss any squash (with that tough skin) in your crock pot with a quarter cup of water. The whole thing. No cutting. Put the lid on, place pot on high and check in two hours.
Once fork pokes through easy, it’s done! Let cook completely, cut and deseed (so much easier!), and serve. BOOM.
