Hello LiveFitters! It’s summer and with summer comes fish tacos. This is a great recipe, super easy. Enjoy!

Fish Tacos

Ingredients

  • 1-2 pounds fresh cod, bones and skins removed – the fish I used was from my CSA, so they were already filleted and ready for me to cut into smaller rectangle pieces
  • 1 tsp salt
  • 1 tsp Mexican oregano
  • 1 tbsp cumin
  • 1 tbsp chili powder
  • 1 cup finely shredded coconut
  • 1 egg, beaten
  • 2 tbsp coconut oil to cook fish in

 

 

Side Dish:  Easy Slaw

Toppings

  • Avocado Sauce (see below)
  • Fresh cilantro
  • Squeeze of lime

Avocado Sauce

  • ½ cup Paleo Mayo
  • 1 ripe avocado
  • ¼ cup fresh lime juice
  • 2 minced cloves of garlic

Mix all in a mini food processor, salt and pepper to taste.

How To

  1. Cut the fish into smaller rectangle pieces; set aside
  2. Mix together all spices and coconut in shallow bowl
  3. Whisk egg in a shallow bowl
  4. Heat coconut oil in a skillet, get it nice and hot
  5. Set up an assembly line, placing the fish in the egg then in the ‘batter’, then place fish in hot skillet on stove
  6. Cook fish until it flakes easily – cod takes longer, it’s a heartier fish. It’s perfect for this recipe
  7. When fish is done, place on a clean plates, ready to serve
  8. Top with Avocado sauce and fresh cilantro, add a side of slaw – Enjoy!
