Easy Thai Slaw

This is a super easy recipe and with cabbage and carrots being in season, you have access to the main ingredients!





  • 1/2 head green cabbage, shredded
  • 1/2 head purple cabbage, shredded
  • 1 large carrot, shredded
  • 1/2 cup loosely packed cilantro, roughly chopped

Mix all ingredients in a large bowl.


  • 1/4 cup fresh lime juice
  • 3/4 cup avocado oil
  • 4 tbsp coconut moo
  • 1/3 tsp salt and pepper

Mix dressing ingredients in a container with a lid – add everything to the jar/container and shake away.

Mix slaw and dressing together and you are done! Enjoy!

This dish is great as lunch the next day with leftover chicken.
